Tony’s Farm Table is the passion project of Mike Hauke, who’s become a New Jersey legend thanks to his proudly unconventional New Jersey pizzerias & sub joints, Tony Boloney’s. With Tony’s Farm Table, he’s made it his mission to go back to a simpler time of food-making by rolling up his sleeves and getting a little dirty.
For over 10 years, his artisans have been crafting products that transcend hundreds of years, shirking modern conveniences of food processors and opting for some elbow grease and a lot of patience. Customers line-up for over 2 hours at farmers markets throughout New Jersey to buy his fresh mozzarella, which is pulled by hand and infused with flavors including truffle and pesto. Extra virgin olive oil is made with olives hand-harvested in Sicily by Mike with the aid of a donkey-powered stone grinder. Marinara sauce is made with local New Jersey tomatoes and slow-cooked in small batches. And with the sfincione, a traditional Sicilian pizza, you can roll up your own sleeves and stretch out the dough yourself. It doesn’t get more authentic Sicilian (and New Jersey) than this, and it’s all being delivered straight to your door!
