Slow-Smoked BBQ From “Top Chef” Star Bruce Kalman
Acclaimed chef Bruce Kalman’s passion for farm-fresh cuisine and top-quality ingredients led him to open LA's Knead & Co. Pasta Bar + Market and Pasadena's UNION, both of which won heaps of praise, and he was nominated for the James Beard Award for Rising Star Chef. Kalman rose to fame as a fan favorite on the 15th season of Bravo’s “Top Chef,” and he fell in love with smoking barbecue while cooking with rocker Dave Grohl at charity events. He honed his pitmaster skills by hosting Las Vegas-area BBQ pop-ups, and in 2020 Soulbelly BBQ was born.
At Soulbelly, Kalman is putting his ample fine dining skills to good use by crafting some truly spectacular barbecue. He’s seasoning Texas-style brisket with just salt and pepper and smoking it for up to 18 hours of post oak, rubbing pork spare ribs with a signature seasoning blend and smoking them for 6 hours until just tender, and smoking pork shoulders for up to 16 hours for flawless pulled pork. This is some of the finest new barbecue in America, and along with smoky sausages, tri-tip pastrami, and classic sides including mac & cheese and beans, they’re being delivered to kitchen tables nationwide!
