New Haven pizza (or âapizza,â pronounced âah-BEETZâ in these parts) is defined by its thin, crispy-yet-chewy, slightly charred crust, courtesy of the intense, dry heat of a coal-burning brick oven (which doesnât give off steam like wood). At Sallyâs Apizza, which has barely changed since day one and is still using the original coal-fired oven, their pizza is absolute perfection, with decades of experience and meticulous attention to detail in every pie, from stretching the slowly fermented dough to knowing exactly when to pull it from the oven.
