Two of Seaside’s delicious meats: Seaside Market’s famous USDA Choice Tri Tip and Stone Porter Beer Pork Chops. Seaside’s Cardiff Crack Tri Tip is carved from the bottom sirloin, trimmed, marinated, and infused through a secret process with either Seaside’s exclusive Burgundy Pepper or Spicy Chipotle Marinade. Seaside Market’s bone-in pork loin chops are infused with a special blend of seasonings and Stone Brewing Company Smoked Porter beer.
Seaside Market in Cardiff by the Sea, California, is home to California’s famous “Cardiff Crack,” a Burgundy Pepper Tri Tip cut from the bottom sirloin so addictive it has attracted an intense cult following. The recipe was created by brothers Pete and John Najjar in 1986, who were experimenting with different spices and marinades. Founded in 1985, the independent, family-owned grocery store has succeeded in creating a one-of-a-kind grilled meat!

- Each tri tip serves 6-8 people

Tri Tip Options Include
- Burgundy Pepper
- Spicy Chipotle
- Meats are vacuum sealed, frozen and shipped with ice packs which may thaw partially or fully during transit
- Meat arrives raw and requires cooking
- Upon arrival, place the meat in the fridge or freezer to serve later
- Meats can be stored in the refrigerator for 3-5 days or in the freezer for 3 months
- To cook, follow the instructions below. Allow meat to thaw in the refrigerator for 24 hours before cooking. Detailed cooking instructions are included in every box
To Serve
- Allow meat to thaw in the fridge for 24 hours before cooking
Grill Method
- Prepare grill for direct and indirect medium high heat
- Sear the tri tip for 5-7 minutes per side over direct heat, until meat is nicely browned and caramelized
- Move the tri tip over to the indirect heat and grill for an additional 10-15 minutes per side
- For medium rare, the tri tip should reach an internal temperature of 130F
- Allow tri tip to rest for 5-10 minutes before slicing
- Slice thinly against the grain and serve!
Oven Roast Method
- Preheat the oven to 450F
- Place the tri tip in a shallow roasting pan. Place the pan in the oven and turn down the temperature to 350F
- Cook for 12-14 minutes per mound
- Check the internal temperature after 30 minutes. For medium rare, the tri tip should reach an internal temperature of 130F
- Allow tri tip to rest for 5-10 minutes before slicing
- Slice thinly against the grain and serve!
