The individual lamb rib chops contain a single bone each, cut from the rack of lamb. As a versatile cut, the rib chop is tender and can be prepared quickly, whether grilled, pan-fried, or broiled. Sold in packages of 6, each package weighs 1.5 – 2 pounds. Please note: This product is provided by Elysian Fields Farms. While this product cannot be tracked like our Pure Bred lamb meat cuts, all lamb labeled as Elysian Fields Farms are raised to comply with our basic standards and requirements, such as all-natural, non-GMO feeding practices and respectful stewardship of every animal.
Chef Thomas Keller and shepherd Keith Martin developed Pure Bred Lamb on the principles of respectful and humane treatment of the animals. Pure Bred lambs are raised respectfully throughout their lives, experiencing very little stress and moderate but consistent activity. This method results in lamb that is tender, pure in flavor, and consistent in texture. Pure Bred Lamb lives up to its name not just from the breed (a traditional cross between a Dorset ewe and a Suffolk ram) but because they use the “Safe Alternative® method,” developed by Keller and Martin, to ensure sustainably raised lamb straight from the farm in Waynesburg, Pennsylvania. No hormones or antibiotics are used in the feed, nor are animals or feed exposed to pesticides.

- Each package weighs approx. 1.5-2 lbs.
- Because there is no frozen inventory of Pure Bred lamb, we require a 6-day lead time for processing this fresh product before it can be shipped overnight to you
- Please note: This product is provided by Elysian Fields Farms.
- Lamb ships fresh with ice packs, may thaw during transit.
- Upon arrival, place in the refrigerator or freezer in the original vacuum-sealed packaging.
- Lamb can be stored in the refrigerator for up to 10 days and in the freezer for up to 6 months.
To Serve
- If frozen, thaw in the refrigerator overnight before cooking.
- Grill for 3-4 minutes per side to reach an internal temperature of 135°-145° for medium rare.
