This is a combo pack of two Kelly’s classics: signature roast beef sandwiches and lobster rolls! Kelly’s legendary roast beef is simply seasoned with salt and pepper before being slowly roasted to medium-rare, sliced thin, piled on a buttered & toasted sesame seed roll, and topped with barbecue sauce. And their legendary cold New England-style lobster rolls are served on a toasted split-top hot dog bun filled with succulent fresh lobster meat, simply tossed with mayonnaise and diced celery. Enjoy with a dill pickle spear and potato chips on the side!

Kelly’s Roast Beef got its start as a hot dog stand, opened by Frank V. McCarthy and Raymond Carey in 1951 on Revere Beach, about five miles north of Downtown Boston. The duo also ran an event hall, and one day a canceled party left them with lots of spare roast beef, so they decided to slice it thin and pile it on a grilled burger bun. The sandwich was a smash hit, and they never looked back. Today, Kelly’s is a Massachusetts icon, and it’s still family-owned-and-operated and renowned for its roast beef, lobster rolls, and chowder. Kelly’s original location is Revere Beach’s most famous landmark, and three additional locations have opened throughout the state.

Classic Roast Beef Sandwich Kit (Makes 2 Sandwiches)

  • 2 Sesame Seed Rolls (each 3.5 oz.)
  • 2 portions Freshly Sliced Roast Beef (each 5 oz.)
  • 2 containers Liquid Butter (each 1.5 oz.)
  • 2 containers BBQ Sauce (each 2 oz.)
  • 2 slices American Cheese
  • 1 packet Mayonnaise (each 2 oz.)
  • Each Sesame Seed Roll measures 4″ × 4″ × 2″

Lobster Roll Kit (Makes 2 Rolls)

  • 2 Hot Dog Rolls (each 6 oz.)
  • Pre-mixed Lobster Meat (12 oz. Total)
    • Mix includes Tail, Knuckle, & Claw Meat
  • 2 containers Liquid Butter (each 1.5 oz.)
  • 2 Pickle Spears (each 8 oz.)
  • 2 bags Utz Potato Chips (each 4 oz.)
  • Each Hot Dog Roll measures 5.5″ × 2″ × 1.5″
  • Surf & Turf Sandwich Combo ships with ice packs, may thaw in transit
  • Upon arrival, store lobster meat in the refrigerator for up to 24 hours. Note: DO NOT FREEZE LOBSTER MEAT! Lobster was previously frozen, doing so will destroy the texture.
  • Pickles may be stored in the refrigerator for 2-3 days.
  • Butter may be stored at room temperature for up to 90 days, Bread may be stored at room temperature for 2-3 days, and chips may be stored at room temperature for up to 30 days.
  • Roast beef may be stored in the freezer for up to 4 weeks, and should be enjoyed within 3 days after defrosting. Defrost in refrigerator for a minimum of 6 hours before serving.
  • Store BBQ Sauce in the refrigerator until 30 minutes prior to sandwich assembly.

To Serve

Lobster Rolls

  • Open both containers of liquid butter and pour both into a shallow bowl.
  • Using a pastry brush or silicone brush “paint” each unbaked side of all four rolls.
  • Set an 8" or 10" shallow pan onto your cooktop and set temperature or flame to a medium – low setting.
  • Remove lobster meat from refrigerator and cut open pouch.
  • Pour lobster mixture into a wide bowl for portioning.
  • Place hot dog rolls into the preheated pan. Note: New England hot dog rolls have a lite and delicate texture. They will need to be carefully handled while toasting.
  • Gently place a hamburger-style spatula on top of the rolls, resting the handle on the edge of the pan. You are trying to get good surface contact. Toast for 30 seconds and then remove the spatula and use it to flip the rolls once they are golden brown. Additional time may be required to achieve the desired color. Turn the hot dog rolls over and repeat the process on the second side.
  • Toast and remove after golden brown. Repeat this process with the remaining hot dog rolls.
  • Once the rolls have been toasted, allow them to cool for a few minutes. They will still be warm but will not be crushed if allowed to cool slightly before being filled.
  • Divide the lobster meat mixture into equal portions and fill each hot dog roll with lobster.
  • Enjoy with a pickle and chips immediately.

Classic Roast Beef Sandwiches

  • Place the sealed beef-filled portion bags out at room temperature while you start to toast your rolls. No longer than 15 minutes.
  • Place a 10" pan, non-stick, stainless steel, or cast iron over medium-high heat. Surface temperature of 350 – 400 F
  • While the pan is heating remove sesame seeded rolls from their packaging.
  • Open the cups of liquid butter and pour them both into a 4" ramakin or other small container. This will allow you to easily and neatly apply the butter.
  • Using a natural fiber or silicone pastry brush evenly apply approximately 3/4 ounce of liquid butter to each interior side of all rolls.
  • Toasting your rolls. Place a tiny amount of liquid butter into the pan and evenly spread it around. Just enough to cover the pan. This will help with the first roll not sticking to the pan. Place the buttered halves of a roll down onto the hot surface. To maximize the surface contact of the roll it would be helpful to place a grill weight or a ceramic plate onto the top of the toasting roll. You will want to time the process for 45 seconds. Remove the weight, check for a golden brown crunchy crust. Allow roll to toast for another 15 seconds or until toasted to your desired doneness. Repeat process with additional rolls. Note: Each cooktop varies in temperature and with age. Carefully watch the toasting process so as NOT to crush of over toast your rolls. Once you have the process down you can easily toast two rolls in the same fashion to save time!
  • Once all rolls are toasted to your satisfaction, place one unopened portion bag with beef into a microwave and heat on high for 25-30 seconds. Note this is done with a 1000 watt microwave. You may need to add or subtract time depending on your individual unit. You are only reheating, NOT cooking the meat. Too much time will begin to take the finished product form medium rare to medium well in an additional 10-20 seconds.
  • Swipe mayo onto bottom bun, and add cheese on top of the mayo
  • Carefully remove warm beef from portion bag and place each sliced piece of beef onto the cheese
  • Pour BBQ Sauce on top to the beef, then the top bun
  • Enjoy!
