  • Comte – The taste of this cheese is variable depending on the age and the season of the milk. It is typically described as salty, mild, and fruity with subtle hints of nutmeg. From Fromageries Marcel Petite
  • Emmentaller – Also called Swiss Cheese, this is known for its grand size and its handmade quality. The Emmenthal cheese-making process is an old tradition, using pure cow’s milk and a maturation period of at least four months. This process allows the rind to develop in an entirely natural manner, enclosing an ivory-colored, mild, slightly nutty-tasting cheese with cherry- sized holes. Emmenthal from Switzerland is a delicacy on every cheese platter, a popular dessert cheese, and is a perfect melting cheese for warm dishes. It won the Silver medal in the World Cheese Awards
  • Fontina – Has a delicate, nutty, almost honeyed flavor, somewhat like a Swiss Gruyere but more buttery and sweeter. Great in fondues. When melted, the flavor is earthy, with a suggestion of mushrooms and a fresh acidity
