Vanilla + Speculoos Ice Cream Cake

This spectacular Speculoos & Vanilla ice cream cake has a base of speculoos chocolate chip ice cream made with cinnamon-spiced Belgian shortbread cookies. The top layer is classic vanilla ice cream, and in-between the two is salty speculoos caramel crunch! It’s topped with homemade whipped cream and rainbow sprinkles.

Davey’s Ice Cream, which opened in the heart of New York’s East Village and has since expanded to Brooklyn, was the result, and it proved to be one of the best ice cream shops in all of New York City.
