- Upon arrival, store french fries and burgers in the freezer for up to 1 month.
- Upon arrival, store buns at room temperature or in the freezer for up to 1 month.
- Upon arrival, store remaining items in the refrigerator for up to 2 weeks.
To Serve
French Fries – Chef’s Recommendation
- Line a flat plate or small sheet pan with paper towels and set it next to the stove.
- Add 3” of olive oil to a cast iron skillet or pot (at least 8" deep to avoid splatter) and heat the oil slowly until a thermometer inserted into the oil reads 375ºF.
- Add the frozen fries to the hot oil and shallow fry for 5 minutes or until golden brown.
- Using a slotted spoon or spider, remove the fries and place on the paper-towel-lined plate.
- Season immediately with fine sea salt or your favorite seasoning salt to taste.
- Serve and enjoy!
French Fries – Oven
- Remove fries from the freezer and defrost in the refrigerator overnight.
- Preheat oven to 425ºF.
- Once defrosted, put the fries in a single layer on a sheet pan. Salt the fries to taste and toss a bit to evenly distribute the salt.
- Bake for 15-20 minutes or until French fries are golden brown and crispy. Lightly shake the pan after 10 minutes to ensure even cooking.
- Season immediately with fine sea salt or your favorite seasoning salt to taste.
- Serve and enjoy!
Burgers
- Remove the burgers from the freezer and defrost in the refrigerator overnight.
- Once defrosted, remove the burgers from the packaging and lay each burger flat on a plate or a sheet pan and set on your counter for 1 hour to bring them to room temperature.
- Toast the buns until golden in a skillet with a small amount of olive oil and salt.
- When you are ready to cook, add 1 tsp of olive oil to a cast iron pan and heat over medium-high heat. (if cooking all 4 burgers at once, you will need a pan at least 12-14 inches wide – if you don’t have a pan that large, cook 2 burgers at a time).
- Just before the olive oil starts to smoke, season both sides of the burgers with ½ tsp fine sea salt each.
- Add the burgers to the hot pan and do not move them for 1 ½ minutes. Alternatively, you can cook patties on a grill until desired temperature. Flip the burgers and immediately add 2 slices of cheese on top. Overlap the cheese so that the corners are shingled. Turn the pan off, cover it and leave it alone for another 3 minutes.
- After this, the burgers should be perfectly medium-rare. Add sauce to the bottom bun and immediately place the burgers on top of the sauce.
- Add onions, jalapenos and pickles.
- Add the top bun, serve, and enjoy!
- If you prefer your burger cooked past medium-rare, simply cook for 2 minutes on the first side, and 4 minutes on the second side after shutting off the heat.
