A true family-run operation, Caluda’s King Cake is owned by the father-and-son duo of John and Josh Caluda. Chef John is the former Pastry Chef of the French Quarter’s famed Royal Orleans Hotel, and he started baking king cakes in 1990 at his former restaurant, called The Coffee Cottage. His son, Josh, has been learning the ropes since he was a child, and today he oversees the 10,000 square foot bakery just outside New Orleans that produces some of the region’s most beloved and award-winning king cakes.
These traditional New Orleans king cakes are made from scratch starting with a deliciously moist sweet Danish dough, filled with copious amounts of butter and cinnamon sugar (and optional sweet cream cheese), baked to perfection, covered in homemade vanilla icing, and then finished off with vibrant purple, green and gold sugars.
