Individually hand-packed and always fresh (never frozen!), each item they ship is made with love by the culinary pros who make the sandwiches for their loyal fanbase in Chicago. They slow roast the beef and craft each batch of the all-natural gravy before they pack it. They hand-chop the celery for the famous hot giardiniera before adding vegetable oil and secret spices – the giardiniera contains no vinegar or preservatives, so keep it refrigerated! The gravy is packed separately from the beef to keep it real (in Chicago, the beef doesn’t touch the gravy until it’s ready to serve)!
To make this Windy City legend, beef is slow-roasted each morning with a little water, fresh garlic, and Al’s super-secret spice mix. The beef roasts are separated from the gravy, cooled, hand-trimmed, and then sliced super-thin. The thinly-sliced beef is dropped back in its own cooking juices and forked onto a sturdy fresh baked Italian roll, then the entire sandwich is dipped backed into the signature gravy, bread and all. The sandwich is then topped with your choice of homemade sweet peppers and/or hot giardiniera. - Upon arrival, store kit in the refrigerator.
- Kit may be stored for up to 1 week in the refrigerator or up to 3 months in the freezer.
To Serve
- Pour gravy into a pot or deep pan.
- Heat gravy to a medium boil, then lower heat to a simmer.
- Add Italian beef to the gravy and cook for 2 minutes.
- While Italian beef is cooking, slice bread in halves.
- Add cooked beef to the bread.
- Add hot giardiniera.
- For a “wet” sandwich, dip the entire sandwich into gravy using tongs.
- For the less adventurous, simply spoon the desired amount of gravy over the top of the sandwich.
- Serve and enjoy!
