Pooja uses ice cream as the perfect blank slate to showcase the familiar flavors of her childhood — warm spices like ginger, nutmeg, cardamom, and saffron. Now, Malai Ice Cream crafts all its ice cream by hand for these totally unique and satisfying flavors.
Malai Ice Cream’s founder Pooja Bavishi uses ice cream as the perfect blank slate to showcase the familiar flavors of her childhood – warm spices and aromatic flavors like ginger, nutmeg, cardamom, and saffron. Founded in 2015, Malai means “cream of the crop,” and is a fitting name for Pooja’s ice cream creations, which draw inspiration from globally-sourced, whole ingredients, and aromatic spices to create unexpected twists on classic ice cream flavors. Pooja crafts her small-batch artisanal ice cream by hand, creating totally unique and satisfying flavors.

- Rose with Cinnamon Roasted Almonds – The most popular, and Malai’s signature flavor! Sweet, floral and spiced – it’s fragrant but delicate and perfectly balanced!
- Masala Chai – Inspired by the beverage we know and love, this is a little sweet, and a little spicy, with hints of ginger, cinnamon, and black pepper
- Coffee Cardamom – Robust coffee flavor, with granules for some texture, paired with floral, but not overpowering cardamom
- Orange Fennel – A citrusy base with an herbal, slightly licorice fennel note makes this pairing familiar, yet surprising
- Mango & Cream – This flavor combines the simplicity of sweet milk with a fruity, tangy and sweet mango and puree. It’s almost an ice cream and sorbet in one!
- Sweet Milk – Think: condensed milk in ice cream form. Sweet simplicity
- Red Chili Chocolate – Using Andhra Pradesh’s heirloom chilies, this is a rich chocolate ice cream, with a kick. The heat of the chili will make you want to go back in for another bite!
- Sea Salt Vanilla – A bit of sea salt to take away the sweet edge of vanilla; this flavor is a satisfying twist on the classic.
- Pineapple Pink Peppercorn – This refreshing flavor mixes the tanginess of pineapple with the sweetness of coconut and white chocolate while a touch of pink peppercorn adds a soft spice note. Dairy-free & Vegan. Contains: Coconut
- Royal Cinnamon with Black Salt Caramel – A rich piquant cinnamon ice cream with a buttery caramel finish. Dairy-free & Vegan. Contains: coconut.
- Spiced Peanut Crunch – Sweet, Salty, nutty, and spicy all in one! This is a rich spiced peanut (dairy free) ice cream with the slightest amount of cayenne pepper. The best part: peanut chikki swirls (a brittle made with ghee and jaggery). Dairy-free & Vegan. Contains: coconut, peanuts.
- Hibiscus Chaat Masala Sorbet – Floral and fruity with a hint of tartness – the chaat masala is a blend of spices that adds a nice savory umami to this unique sorbet. Dairy-free & Vegan.
- Lemon Cardamom – Fun fact: I did not like cardamom growing up. I know, it’s painful to even see it written here! Years later, I spontaneously decided to add a bit of cardamom to a batch of lemon glazed cookies. They were perfect. The floral cardamom happily mingled with the bright lemon – I didn’t know what I had been missing! There has never been such a seamless yet unexpected flavor pairing. Don’t make the same mistake as I did by waiting on this one.
- Carrot Halwa – One of my dad’s favorite desserts – and there are many – is carrot halwa, a sweet pudding that is made by cooking carrots with ghee, sugar and cardamom. He always likes to take his treats to the next level, and so for as long as I can remember he always tops the carrot halwa with a scoop of ice cream – the inspiration for this ice cream flavor. Just like the actual dessert, we cook carrots with ghee and cardamom, but then we just mix it into our ice cream base! The best of both worlds, and dad-approved.
- Agate Candy and Saffron – Inspired by our founder’s win on Food Network’s Chopped Sweets, this limited edition ice cream takes the subtle blue raspberry notes of beautiful agate candy and pairs it seamlessly with the honey like flavors of saffron. We would say that it’s a winning flavor
- Salted Browned Butter Pecan – A classic with a twist! Using browned butter to add even more depth and nuttiness as well as a large pinch of sea salt completely changes this staple…for the better! Contains: Milk, treenuts (pecans)
- Mace Date Caramel Chocolate Chip – We love celebrating women-owned food businesses – we are one! So when Sylvie from Just Date Syrup reached out to create a holiday flavor filled with dates and ice cream, we were excited. When she told us that Amy Guittard from Guittard Chocolate would be involved, it was a no brainer! Together, we created a creamy ice cream packed with jammy date flavor and hints of bittersweet chocolate. Holiday indulgence at its very best!
- Chocolate Coconut Burfi (Vegan) – A dairy-free rich chocolate sorbet swirled with a cardamom-spiced coconut fudge. We love the chewy and creamy texture that the coconut burfi adds to this vegan frozen delight.
- Apricot Mace – This light sherbet combines the tartness of apricot and the sweetness of piney mace.
- Cherry Black Cardamom – Smoky black cardamom ice cream with a sweet and tart chunky cherry compote layered throughout.

- Tamarind Spice (Vegan) – The sweetness of the sorbet is balanced by the tang of the tamarind and rounded out with subtle spiced notes of fragrant cinnamon, aromatic clove and a hint of cayenne pepper
- Banana Peanut Butter Garam Masala (Vegan) – Dairy-free banana sorbet with warm aromatic notes of garam masala and a peanut butter swirl
- Pumpkin Garam Masala Crumble – A pumpkin ice cream with the sweet and savory spices of garam masala and a smoky black cardamom graham cracker folded throughout
- Black Forest – Created to celebrate our Brooklyn shop’s 2nd birthday – A cardamom “whipped cream” ice cream with rich, decadent streams of chocolate fudge, and a cherry rose ripple folded in throughout. Tastes like a birthday!
- Confetti Sweet Milk – We take the creaminess of Sweet Milk and add the best sprinkles that we know: candied fennel seeds! Each bite will be a contrast of the sweetness of fresh dairy and the minty woodsiness of a pop of a fennel seed.
- Sweet Roti and Ghee – Bread, sugar, and butter — we take that and ‘Indianize’ it with ingredients like roti, jaggery, and ghee.
- Thandai – While diving into the snack table at a family wedding, I came face to face with a new treat – Thandai. I marveled at the sweetly spiced drink, while listening to my sister (the family encyclopedia) divulge the delicious details about the tradition of serving it during spring holidays, including Holi. Since then, I always make Thandai as the calendar flips to March to start a new family tradition. Ground almonds mixed with fennel seeds, cardamom, black pepper and saffron are steeped in our ice cream base – transforming this traditional sip into our signature Holi pint.
- Strawberry Pie – A star anise ice cream base with the swirl of strawberry fennel jam and a tea biscuit crust – the perfect start to the summer.
- Tulsi Chocolate Chip – This is the Malai version of the classic mint chocolate chip. Tulsi has mint and basil-like qualities, and we fold in chocolate and cocoa nibs throughout!
- Fig on Fig – Fig jam swirled in ice cream infused with toasted fig leaves, this flavor has as much delicious summer fig flavor as possible.
- Lychee Sorbet – This sorbet is lychee in frozen form – sweet, floral with just a touch of tang. It’s refreshing and satisfying.
- Coconut Tahini with Date Caramel – This flavor hits all the notes: sweetness from the coconut, smokiness from the tahini and earthiness from the dates – it’s a flavor fit for everyone!
- Cilantro Mint (Vegan) – Crafted to mirror spicy “green” chutney, serrano chilies are blended with fresh mint and cilantro.It’s grassy, tart, slightly spicy and addictive.

- Saffron Pistachio (Seasonal) – When I was a kid, no dinner party at our home was complete without saffron pistachio ice cream. The true crowd pleaser of Indian ice creams, this flavor has everything that people love: honey-like floral saffron with nutty green pistachios. In our reinvention, we make a more intense saffron base, and swirl in a pistachio white chocolate butter with a touch of cardamom for even more nutty flavor. Give the people even more of what they love!
- Shahi Toast – Inspired by the decadent Indian dessert, our take on Shahi Toast is a rich saffron-spiced ice cream with toasty, caramelized bread pieces with just a hint of cardamom studded throughout.
- Holi Sweet Milk – We use Supernatural’s plant based colors to create the cheeriest scoop to celebrate the colorful season of springtime and the colors of Holi!
- Cardamom Pistachio Crumble – Who doesn’t love a little crunch with their ice cream? Inspired by an Indian shortbread called nankhatai, a spiced shortbread that is meant to be dunked in chai, we make a nutty, caramelized crumb topping and fold it into rich cardamom ice cream. It is decadent with bursts of spice and pops of pistachio that adds just enough crunch to make it extremely satisfying with creamy ice cream. This flavor also marks the opening of our new location, which makes it equal parts delicious and celebratory!
- Date Tamarind – Tart, sweet and lightly spiced. The date’s rich caramel sweetness is balanced by the tang of the tamarind and rounded out with subtle spice notes of fragrant cinnamon, clove and a hint of cayenne pepper.
- Milk & Cookies – Chocolate Chili cookies and Perfect Chocolate Chip cookies are folded into a milk masala ice cream that’s spiked with nutmeg, cardamom and black pepper.
- Butterscotch Butter Pecan – Our rendition takes this classic flavor to new heights – fennel seeds add unexpected notes of licorice that beautifully complement the sweetness of butterscotch. For that signature crunch, we’ve swapped candies with buttery toasted pecans!
- Chikoo – Vibrant and sweet sapota ice cream with a warming touch of mace.
- Guava Chili (Vegan) – Guava sorbet elevated with a hint of mildly spicy Kashmiri red chili to take you on a flavor journey.
- Mango Cardamom Tres Leches – Whipped cardamom ice cream studded with mango cake and layered with a mango condensed milk drizzle!
- Ghughra – The essence of traditional ghughra filling is captured in this special Diwali ice cream: a lightly scented cardamom ice cream scattered with ground almonds and cashews, milk powder, ghee and sugar, which takes on the texture of cookie dough. Deeply satisfying, nutty and spiced – all in one.
- Kaju Katli – We couldn’t think of a more iconic Indian sweet than kaju katli so we had to bring it to our Diwali flavor lineup. Our version is a cashew ice cream swirled with a cashew fudge ripple and topped with a piece of housemade kaju katli (topped with its signature silver foil!).
- Kheer – Orange zest is added to the ice cream version for some extra brightness, but everything else stays the same for this classic dessert: rice, sweetened dairy, and nutmeg.
- Peda – Peda, a milk fudge, faintly spiced with cardamom and topped with pistachios, is a favorite at Malai. To round out the Malai Diwali lineup, we fortify our sweet milk ice cream with toasted milk powder and cardamom and then fold in roasted pistachios.
- Puran Poli* – Inspired by puran poli, a wheat bread filled with plump sweetened lentils, served hot under a puddle of melted ghee. This is that dish, in ice cream form: ghee-topped toasted roti is folded through a slightly smoky lentil ice cream.
- Ras Malai – Ras malai is a mainstay on dessert tables – and now, in your freezer as a limited-edition Diwali treat! To make our Ras Malai ice cream, we fold paneer into saffron spiced ice cream to bring you this classic dessert but in frozen form.
- Shrikhand – This pint perfectly captures the Diwali staple Shrikhand: A rich, thick, sweet yogurt flavored with amber threads of saffron and studded with sliced almonds.
