Each cake is made for us by hand from a recipe handed down through generations of ladies from Smith Island, Maryland. Smith Island (population 350) is situated in the middle of the Chesapeake Bay just north of the Virginia line and is accessible only by boat. Since Ron and Margie Kauffman established Kent Island Crab Cakes in 1980, the seafood purveyor has been preparing the finest Maryland style jumbo lump crab cakes made with Maryland blue crabs.
