Grandma-Style Pizza from a James Beard Award Winner

Chef Dan Kluger won the 2011 James Beard Award for his masterful cooking at New Yorkā€™s ABC Kitchen, and his Loring Place has been one of Greenwich Villageā€™s most acclaimed restaurants since it opened in 2016. Kluger has become renowned for his creative, market-driven, vegetable-forward dishes, and at the casual Washington Squares, heā€™s turned his attention to a food thatā€™s near and dear to his heart: pizza! Specifically, the rectangular pan pizza known as Grandma-style, which has been the star of the Loring Place menu for years.

Grandma-style pizza is slightly thinner than the similar Sicilian-style, and itā€™s baked in an oiled pan for a crust thatā€™s crispy on the outside, fluffy on the inside, and sturdy enough to hold up to abundant toppings. Thereā€™s also a fair amount of whole wheat in the dough, which adds a nutty flavor.
