Grandma-Style Pizza from a James Beard Award Winner
Chef Dan Kluger won the 2011 James Beard Award for his masterful cooking at New Yorkās ABC Kitchen, and his Loring Place has been one of Greenwich Villageās most acclaimed restaurants since it opened in 2016. Kluger has become renowned for his creative, market-driven, vegetable-forward dishes, and at the casual Washington Squares, heās turned his attention to a food thatās near and dear to his heart: pizza! Specifically, the rectangular pan pizza known as Grandma-style, which has been the star of the Loring Place menu for years.
Grandma-style pizza is slightly thinner than the similar Sicilian-style, and itās baked in an oiled pan for a crust thatās crispy on the outside, fluffy on the inside, and sturdy enough to hold up to abundant toppings. Thereās also a fair amount of whole wheat in the dough, which adds a nutty flavor.
