For decades, locals and tourists alike have flocked to a quiet corner of NOLA’s Treme neighborhood to line up for a taste of founder Willie Mae Seaton’s downright magical fried chicken, which is dunked in a spicy, secret-recipe wet batter before being deep fried to juicy perfection with a flawless, shatteringly-crisp crust. Willie Mae’s was founded by Seaton back in 1957 as a barber shop, beauty salon, and bar (hence the “scotch house”), but in the early 1970s she converted the low-slung building into a full-time restaurant. The building was badly damaged during 2005’s Hurricane Katrina, but it bounced back stronger than ever. Sadly, a fire devastated the restaurant in April 2023, but once again the community is rallying to rebuild, and in November 2024 a new location opened in Downtown New Orleans. Willie Mae’s was named an “American Classic” by the James Beard Foundation in 2006, and today Seaton’s legacy (and recipes) are carried on by her great-granddaughter, Kerry Seaton Stewart.

- This pack ships frozen with ice packs, and may thaw in transit.
- Chicken:
- May be kept in the refrigerator for up to 4 days or frozen for up to 14 days.
- Sides:
- Upon arrival, place sides in the refrigerator if planning to enjoy it within 4 days.
- If not, keep frozen until ready to enjoy.
- Sides can be stored in the freezer for up to 4 weeks.
- Cornbread:
- May be kept on the counter for up to 4 days or in the refrigerator for up to 14 days.
- Freezing is not recommended.
- Your Haydel’s king cake & frosting can be stored in the refrigerator for up to 7 days.
- The green, purple, and yellow sugars are the traditional colors of Mardi Gras! You can keep these, and the icing, at room temperature until ready to assemble your cake.
- Olive Salad and Hurricane Drink Mix can be stored at room temperature until opened.
- Once opened, Olive Salad can be stored in the refrigerator for up to 12 months and Hurricane Drink Mix can be stored in the refrigerator for up to 2 weeks.
- Pralines may be stored at room temperature for up to 1 month.
To Serve
Fried Chicken
- Preheat oven to 400° F with convection or 425° F without convection.
- Cook until the chicken reaches 165 F and the crust is golden and crisp, turning halfway through. This will take approximately 15-20 minutes for breasts and thighs and 12-15 minutes for drumsticks, and wings.
Sides
- Fill a medium pot with water and boil.
- Once boiling, place sides (in their bags) into the water for 10-12 minutes to completely heat through.
- Remove carefully and serve.
Cornbread Muffins
- Enjoy at room temperature or warm in the microwave for 10-15 seconds.
King Cake
This king cake isn’t just a dessert – enjoy it any time of day as breakfast, a snack, or coffee cake!
- Remove the king cake and frosting from the refrigerator and leave them at room temperature for 3 hours prior to serving.
- Give the icing a stir and spread it evenly across top of the cake.
- Sprinkle the colored sugars in stripes across top of the cake. Be sure to do this quickly, before the icing sets.
- That’s it! Now slice the cake and see who finds the baby!
Beignet Mix
- Mix in bowl 2 cups mix and 7 fl. oz. water. Stir with spoon until blended.
- Roll to 1/8" thickness on floured surface, using flour liberally on dough.
- Cut into 2 1/4" squares. Makes about 2 dozen.
- Fry 1-2" of oil at 370° F basting continually on each side until puffy and light golden. Drain well. (Oil should be hot enough for dough to pop to surface in 8-10 seconds.)
- Sprinkle generously with powdered sugar and enjoy!
Olive Salad
- Olive Salad is ready to enjoy right out of the jar! Or add cream cheese & sour cream to serve with your favorite chips.
Hurricane Drink Mix
- Get a glass that holds 28 oz.
- Add 4 oz. of Hurricane Rum or a good Amber/Gold Rum.
- Add 4 oz. of Hurricane Mix.
- Fill with crushed ice.
- Garnish with an orange and cherry.
- Enjoy!
