This kit is a delicious taste of what put Kelly on the map, and a perfect Southern game day brunch! It includes buttermilk biscuits that bake up big & fluffy in your oven along with Kelly’s signature creamy Southern pimento cheese and hickory-smoked Cajun andouille sausage from Lafayette’s renowned Comeaux’s!

- This package ships frozen with dry ice. Dry ice may dissipate in transit, the product may thaw. DO NOT remove dry ice with bare hands.
- Upon arrival, keep biscuits in packaging and store them in the freezer for up to 1 month.
- Pimento cheese can be stored in the refrigerator for up to 1 week or in the freezer for up to 1 month
- Sausage can be stored in the refrigerator for up to 1 week or in the freezer for up to 6 months
- Your Haydel’s king cake & frosting can be stored in the refrigerator for up to 7 days.
- The green, purple, and yellow sugars are the traditional colors of Mardi Gras! You can keep these, and the icing, at room temperature until ready to assemble your cake.
- Olive Salad and Hurricane Drink Mix can be stored at room temperature until opened.
- Once opened, Olive Salad can be stored in the refrigerator for up to 12 months and Hurricane Drink Mix can be stored in the refrigerator for up to 2 weeks.
- Pralines may be stored at room temperature for up to 1 month.
To Serve
Biscuits
- Preheat the oven to 400° F.
- Open your package and separate frozen biscuits into individual biscuits and place them on a parchment-lined sheet tray, with a couple inches in-between each.
- Bake from frozen for 35-40 minutes, rotating halfway through.
- Serve with pimento cheese and sausage, or get creative with jam, honey, or any other toppings you like!
Pimento Cheese
- If frozen, let thaw in the refrigerator overnight.
- Let sit at room temperature for 10 to 20 minutes before serving.
- Spread desired amount on biscuits and enjoy!
Sausage
This spicy, smoky sausage can be sliced lengthwise as a hearty side or sliced into coins and served with toothpicks. You can also slice it, sear it, and make it into a sandwich with the biscuits and pimento cheese!
- If frozen, let thaw in the refrigerator overnight before preparing.
- Slice andouille lengthwise
- Heat a nonstick pan over medium heat. When the pan feels hot, place andouille cut-side down and heat until slightly browned and warm to the touch, 4-6 minutes. Flip over andouille, add 1 tablespoon water to the pan, and cover with a lid. Allow to cook another 2-3 minutes until fully warmed through.
- Alternatively, thinly slice andouille into thick coins once thawed, and heat a nonstick pan over medium heat. Warm andouille until slightly browned and warm to the touch, 2-3 minutes per side.
King Cake
This king cake isn’t just a dessert – enjoy it any time of day as breakfast, a snack, or coffee cake!
- Remove the king cake and frosting from the refrigerator and leave them at room temperature for 3 hours prior to serving.
- Give the icing a stir and spread it evenly across top of the cake.
- Sprinkle the colored sugars in stripes across top of the cake. Be sure to do this quickly, before the icing sets.
- That’s it! Now slice the cake and see who finds the baby!
Beignet Mix
- Mix in bowl 2 cups mix and 7 fl. oz. water. Stir with spoon until blended.
- Roll to 1/8" thickness on floured surface, using flour liberally on dough.
- Cut into 2 1/4" squares. Makes about 2 dozen.
- Fry 1-2" of oil at 370° F basting continually on each side until puffy and light golden. Drain well. (Oil should be hot enough for dough to pop to surface in 8-10 seconds.)
- Sprinkle generously with powdered sugar and enjoy!
Olive Salad
- Olive Salad is ready to enjoy right out of the jar! Or add cream cheese & sour cream to serve with your favorite chips.
Hurricane Drink Mix
- Get a glass that holds 28 oz.
- Add 4 oz. of Hurricane Rum or a good Amber/Gold Rum.
- Add 4 oz. of Hurricane Mix.
- Fill with crushed ice.
- Garnish with an orange and cherry.
- Enjoy!
