The Sehnert family, German by descent, settled in the same areas as Germans from Russia, who originated the bieroc and brought it to the Midwest. Sehnert’s makes its version of the bieroc with ground beef infused with their secret seasoning blend, cabbage, and their homemade crusty bread dough. The Sehnert’s bieroc leaves the ends of its bread open, resulting in flavorful meat in every bite. They’re still made by hand today.
The Sehnert family has been baking since the 1500s, and in 1897 Richard Sehnert brought the family bakery from his native Germany to America. Ten branches of the Sehnert family opened bakeries in the US during the 1900s, but today only one remains. Sehnert’s Bakery has been a cornerstone of the southwest Nebraska town of McCook since being founded by Walt and Jean Sehnert in 1957, carried into the 21st century under the ownership of Walt and Jean’s son Matt and his wife Shelley, and today it’s owned by Sehnert family friends Andrew and Alix Ambriz, along with their sons. In 2019, the bakery was honored by the James Beard Foundation with their prestigious America’s Classics Award for their Bieroc.
