After chef Nic Bryon was laid off from his job at one of Tampa’s trendiest restaurants at the onset of the Covid-19 pandemic, he teamed up with his brother Greg and translated his love for all things pasta into Pasta Packs.   • Upon arrival, store pasta kit in the refrigerator until ready to prepare.
  • If you don’t plan to enjoy within 2-3 days, it’s advisable to place them in the freezer.
  • Each pack can be safely frozen for up to 1 month with the exception of the Garlic Parmesan Fettuccine packs. Please note that due to its cream-based sauce, we do not recommend freezing.
  • Pecorino Romano and other cheeses should be stored in the refrigerator for up to 1 month.
  • Sauce can remain in the refrigerator for up to 10 days.

To Serve

Spinach Fettuccine With Walnut Pesto (Vegan)

  • If frozen, thaw frozen sauce packs overnight in the refrigerator. Pasta can remain frozen until ready to cook.
  • Bring a pot of lightly salted water to a boil. For best results, prepare pasta and sauce at the same time.
  • Meanwhile, heat a separate sauté pan on low heat. Open thawed sauce pack with kitchen shears and add contents to the sauté pan, stirring often.
  • Straight from the freezer, use kitchen shears to open the pasta pack and add pasta to the boiling water, stirring often. Pasta will need to cook for 8-10 minutes or until al dente.
  • After approx. 3-4 min (7-8 minutes, if frozen), check one of the noodles for al dente texture.
  • Use tongs or a slotted spoon to transfer the pasta to the pan with walnut pesto. Try not to transfer too much water from pasta — a little is okay.
  • Remove sauté pan from heat.
  • Time to taste the dish! You should be tasting the nuttiness from the walnuts, following the rich & pungent basil with a zest of lemon and fresh garlic. Flavor as desired, it may need a dash of salt & pepper or maybe a light squeeze of lemon.
  • Once your desired flavor is achieved, use tongs or a slotted spoon to plate your pasta. Remember to twist & twirl for presentation.

Spaghetti & Meatball

  • If frozen, thaw frozen sauce packs and protein packs overnight in the refrigerator. Pasta can remain frozen until ready to cook.
  • Begin by preheating the oven to 425 F.
  • While the oven preheats, bring a pot of lightly salted water to a boil.
  • When the oven has reached 425 degrees, open the meatball pack and tomato sauce pack. Place the 2 meatballs in the baking pan and add the contents of the sauce pack, making sure to fully cover (but not submerge) the meatballs with the sauce. Cover the baking dish with foil and bake the meatballs for 20 minutes.
  • Open Pasta Pack and add pasta to the boiling water, stirring often. Pasta will need to cook for 8-10 minutes or until al dente.
  • After approx. 3-4 minutes (7-8 minutes, if frozen), check one of the noodles for al dente texture.
  • Use tongs or a slotted spoon to transfer the pasta to a bowl and set aside. Try not to transfer too much water from pasta — a little is okay.
  • These next few minutes give you a chance to pour a glass of wine and turn on your favorite relaxing playlist; set the vibe.
  • When the meatballs have baked for 20 minutes, carefully remove foil from the pan. Check the meatballs — there should be a slight ooze of cheese. Carefully scoop out the meatballs one at a time and set aside.
  • Gently add pasta to the baking dish and mix with sauce to coat evenly. Season with salt & pepper as desired.
  • Time to taste the dish! You should be tasting the sweetness and acidity from the silky tomato sauce paired with the juiciness of the cheese-filled meatball.
  • Begin to plate your pasta. Remember to twist & twirl for presentation.

Catavelli Alla Norma

  • If frozen, thaw frozen sauce packs and overnight in the refrigerator. Pasta can remain frozen until ready to cook.
  • Bring a pot of lightly salted water to a boil. For best results, prepare pasta and sauce at the same time.
  • Meanwhile, heat a separate sauté pan on low heat. Open thawed Sauce Pack with kitchen shears and add contents to the sauté pan, stirring often.
  • Straight from the freezer, use kitchen shears to open the Pasta Pack and add pasta to the boiling water, stirring often. Pasta will need to cook for 8-10 minutes or until al dente.
  • After approx. 3-4 minutes (7-8 minutes, if frozen), check one of the noodles for al dente texture.
  • Use tongs or a slotted spoon to transfer the pasta to the alla norma sauce. Try not to transfer too much water from pasta — a little is okay.
  • Gently mix pasta with sauce to coat evenly. Season with salt & pepper as desired.
  • Time to taste the dish! You should be tasting the savory aubergine and vegetables, complemented by rich ricotta and rich, fresh roasted tomato.
  • Once your desired flavor is achieved, begin to plate your pasta. Chef recommends plating a spoonful of sauce first, then using a plating spoon to scoop the Alla Norma and place on the plate starting in the center. Build up the plate by adding scoops pasta, aubergine and tomato chunks. Finish with a generous sprinkle of ricotta salata.

Spaghetti Cacio e Pepe Kit

  • Pasta can remain frozen until ready to cook.
  • Bring a pot of lightly salted water to a boil. For best results, prepare pasta and butter at the same time.
  • Meanwhile, heat a separate sauté pan on low heat. Open the Butter Pack with kitchen shears and add contents to the sauté pan. Melt the butter and black pepper, swirling until it becomes foamy and frothy.
  • Open the Pasta Pack and add pasta to the boiling water, stirring often. Pasta will need to cook for 5-7 minutes (8-10 minutes, if frozen) or until al dente.
  • After approx. 3-4 minutes (7-8 minutes, if frozen), check one of the noodles for al dente texture. When the pasta is al dente, use tongs or a slotted spoon to transfer pasta to the sauté pan. Try not to transfer too much water — a little is okay. Remove the pan from heat.
  • Open the cheese pack and add to the pan as well, along with 2-4 tablespoons of pasta water. Gently blend right away, mixing and using the heat to melt the cheese. Add more pasta water as needed to make it creamier.
  • Serve immediately — do not let the dish cool, as it is best enjoyed hot, gooey & cheesy.
  • Once your desired flavor is achieved, use tongs or a slotted spoon to plate your pasta. Remember to twist & twirl for presentation.

Garlic Parmesan Fettuccine

  • If frozen, thaw frozen protein packs overnight in the refrigerator. Pasta can remain frozen until ready to cook.
  • Bring a pot of lightly salted water to a boil. For best results, prepare pasta and sauce at the same time.
  • In a cold sauté pan open thawed garlic pack with kitchen shears and add sauce to the pan and set aside, do not heat the sauce yet. Add your protein if you have.
  • Straight from the freezer, use kitchen shears to open the Pasta Pack and add pasta to the boiling water, stirring often. Pasta will need to cook for 4-5 minutes (8-10 minutes, if frozen) or until al dente.
  • After approximately 3-4 minutes (7-8 minutes, if frozen), check one of the noodles for al dente texture.
  • Remove pasta with tongs or a slotted spoon and add it to the garlic parm pan. Try not to transfer too much water from pasta — a little is okay. Gently mix your protein with sauce to coat evenly.
  • On medium heat mix the pasta with sauce and protein until the sauce begins to simmer. Add more pasta water if needed.
  • Time to taste the dish! You should be tasting high notes of fresh shaved garlic and parmesan. Flavor as desired; it may need a dash of salt & pepper, depending on your palette.
  • Once your desired flavor is achieved, begin to plate your pasta. Remember to twist & twirl for presentation. We recommend plating the fettuccine noodles first, followed by a few spoons of your protein. Then drizzle over the remaining sauce, and finally finish with a generous sprinkle of toasted bread crumbs for the crunch factor.

Spaghetti Aglio e Olio With Shrimp

  • If frozen, thaw frozen Protein Packs overnight in the refrigerator. Pasta can remain frozen until ready to cook.
  • Bring a pot of lightly salted water to a boil. For best results, prepare pasta and sauce at the same time.
  • Meanwhile, heat a separate sauté pan on low heat. Add the shaved garlic to the warm pan. Cook garlic for 1-2 minutes until it begins to sweat, but do not color.
  • Open the Oil and Parsley Pack with kitchen shears. Add to the garlic and cook for 3-4 minutes.
  • Open the Pasta Pack and add pasta to the boiling water, stirring often. Pasta will need to cook for 4-5 minutes (8-10 minutes, if frozen) or until al dente.
  • After approx. 3-4 minutes (7-8 minutes, if frozen), check one of the noodles for al dente texture.
  • Open thawed Shrimp Pack and add to the aglio e olio. Cook for an additional 2-3 minutes.
  • Time to taste the dish! You should be tasting fresh lemon, parsley, and a slight kick from the red pepper and aromatic garlic. Flavor as desired, it may need a dash of salt & pepper or maybe a light squeeze of a lemon.
  • Once your desired flavor is achieved, begin to plate your pasta. Remember to twist & twirl for presentation.

Pappardelle Bolognese

  • If frozen, thaw frozen Sauce Packs overnight in the refrigerator. Pasta can remain frozen until ready to cook.
  • Bring a pot of lightly salted water to a boil. For best results, prepare pasta and sauce at the same time.
  • Meanwhile, heat a separate sauté pan on low heat. Open thawed Sauce Pack with kitchen shears and add contents to the sauté pan, stirring often.
  • Open the Pasta Pack and add pasta to the boiling water, stirring often. Pasta will need to cook for 4-5 minutes (8-10 minutes, if frozen) or until al dente.
  • After approx. 3-4 minutes (7-8 minutes, if frozen), check one of the noodles for al dente texture. Remove pasta with tongs or a slotted spoon and slowly add it to the bolognese. Try not to transfer too much water from pasta — a little is okay.
  • Time to taste the dish! You should taste the tenderness of the beef salt from the pancetta and the sweetness from the white wine. Flavor as desired; it may need a dash of salt & pepper, depending on your palette.
  • Once your desired flavor is achieved, begin to plate your pasta. Remember to twist & twirl for presentation. We recommend plating the pappardelle first, followed by bolognese, then sprinkle with pecorino.

  • Warm the sauté pan to low heat. Open the Sauce Pack with kitchen shears and add sauce to the pan to heat slowly, stirring often.
  • Open Pasta Pack and add pasta to the boiling water, stirring often. Pasta will need to cook for 4-5 minutes or until al dente.
  • After approximately 3-4 minutes, check one of the noodles for al dente texture.
  • Use tongs or a slotted spoon to transfer the pasta to the sauce. Try not to transfer too much water from pasta — a little is okay.
  • Gently mix pasta with sauce to coat evenly. Season with salt & pepper as desired.
