Colomba is the traditional Easter cake. This Colomba is made only with natural sourdough, which passes through a 48-hour double fermentation. It is filled with candied oranges, and is studded with little black dots of Tahiti Bourbon vanilla. It’s covered with a sugar glaze, which is enriched with almonds. Colomba is a rich but highly digestible cake, thanks to the usage both of first quality raw materials and of long fermentation techniques. 100% prepared by hand with passion since 1882, in keeping with tradition.
