To make their signature Pastrami Short Rib, this hefty chunk of beef is soaked for eight days in pastrami brine before being smoked for seven hours over oak and finished with a light glaze of honey mustard. This is a whole, fully cooked, frozen, vacuum-sealed, bone-in rack of three short ribs, and each rib weighs at least a pound!

Regarded as one of New York’s very best barbecue joints, it’s become a beloved local hangout thanks to its expertly-made BBQ classics, all smoked low and slow over white oak, and their signature sides, all made fresh daily. This package includes your choice of 1 or 2 racks of Pastrami Beef Ribs

  • Each rack serves 3-4 people
  • Each rib rack consists of 3 ribs, weighs approx. 3 lbs. and measures 9″ × 9.5

  • 6 or 12 pieces Candied Bacon – Morgan’s Candied Bacon, is a deliciously addictive treat made by coating smoked bacon strips in brown sugar and maple syrup and baking them until caramelized. The result is a perfect balance of sweet, salty, and crispy, with a hint of spice for added depth—a crowd-pleasing snack or unique cocktail garnish.

  • 12 or 25 Smoked Jumbo Wings – These smoked jumbo wings are a crowd-pleasing delight, smoked in-house over oak wood for a deep, smoky flavor and tender, juicy texture. Enjoy them “naked” to savor the pure smokiness, or choose to have them tossed in Morgan’s homemade barbecue sauce for a sweet, tangy finish, or buffalo sauce for a spicy kick.

Mac & Cheese Flavor Options Include

  • “Old School” – Traditional mac with a smooth, velvety cheese sauce.
  • “Smoked Bacon” – Featuring crispy, smoky bacon amidst cheesy goodness!
  • “Mushroom” – The mac n’cheese you know and love, with earthy, sautéed mushrooms.
  • “Truffle” – Infused with a hint of aromatic truffle for an elevated flavor twist!

Smoked Wings Flavor Options Include

  • “Naked”
  • Tossed in Morgan’s Homemade Barbecue Sauce
  • Tossed in Morgan’s Buffalo Sauce
  • BBQ ships frozen with ice packs, may thaw in transit.
  • Pastrami Beef Ribs should be stored in the freezer until ready to cook or for up to 90 days.
  • Once ready to cook, thaw meat in the refrigerator overnight or for up to 24 hours. Must be reheated from 41° F to 165° F within 2 hours.
  • Once opened, BBQ Sauce may be stored in the refrigerator for up to 1 month.
  • Candied Bacon & Mac & Cheese may be stored in the refrigerator for up to 5 days.
  • Smoked Wings may be stored in the refrigerator for up to 5 days or in the freezer for up to 3 months.

To Serve

  • If frozen, defrost overnight in the sealed package.
  • Preheat the oven to 275° F.
  • Remove meat & juices from the sealed package over lots of foil.
  • Slice 8-10 pats of butter, and place on top of the meat.
  • Wrap tightly, completely covering the meat with foil.
  • Heat for approx. 60 – 90 minutes.
  • Test for preferred internal temperature (we recommend 165° F.)
  • Enjoy!

Mac & Cheese – Add On

  • Preheat oven to 300° F.
  • Transfer to saucepan or baking pan, sprinkle cheese on top and cook in oven for 20-25 minutes until cheese is golden brown.
  • Serve and enjoy!

Candied Bacon – Add On

  • Thaw if frozen.
  • Preheat oven to 250℉.
  • Place bacon on baking sheet and cook for 8 minutes or until warm.
  • Serve and enjoy!

Smoked Jumbo Wings

  • If frozen, defrost overnight in the sealed package.
  • Preheat the oven to 350°F.
  • Place wings on baking sheet.
  • Cook for 15 minutes or until warm.
  • Serve and enjoy!
