Melissa Cookston, the most decorated woman in competitive barbecue, founded Memphis BBQ Company in 2011 in Horn Lake, Mississippi. To Serve

Brown Sugar Ham Glaze

  • Preheat oven to 300 F
  • Pour ½ cup of water, juice, or soda over ham.
  • Cover ham and place in oven for 2 hours.
  • In the last 20 minutes of cooking, open glaze pack and brush glaze on
    ham.
  • Return to oven uncovered for 10 minutes to allow glaze to thicken.
  • Enjoy!

Ham Bone & White Bean Stew

  • For best results, soak beans (1 pound) the night before cooking.
  • Remove any ham meat that has been sliced. In a large Dutch oven, place 2 quarts of water, the ham bone, and the soaked (then drained) beans.
  • Pour in the soup mix packet. Bring to a boil, then reduce to a simmer and cover. Cook for one hour, stirring occasionally and adding water by the cup if necessary.
  • Remove ham bone and use a knife to cut away any ham from bone and chop.
  • Return ham to soup.
  • Continue to cook for 1 to 2 hours, or until beans are tender.
  • Slightly mash some of the beans against the side of the pot and stir in to get a creamy texture. Adjust for seasoning and serve!
