Heritage turkey is brined and then smoked low and slow over post oak on a rotisserie-style J&R Oyler for approx 4 hours. The tender and juicy meat is delivered to you vacuum sealed for easy reheating.

The pan gravy is made special every Thanksgiving with rich, housemade stock, smoked beef tallow and leaf lard, and seasoned with cane vinegar and thyme.

Savory cornbread is layered with richness from our smoked hogfat.

Pimento Mac & Cheese is seasoned with the amazing and classical southern flavor of pimento.

Loaded Potato Mash: This crave-worthy side is the perfect accompaniment to any meal. We slowly boil the potatoes until tender and then gently roll the potatoes with our favorite baked potato toppings – sour cream, cheddar cheese, bacon bits (AND bacon fat!), and green onions. We serve the mash warm in our restaurants but also enjoy it cold, straight out of the fridge!

Korean Braised Greens: This not-so-subtle, side dish is a flavor bomb of spicy gochujang and southern braised greens. It warms the soul and excites the senses. Texas Monthly BBQ Editor Daniel Vaughn praised these greens as being "the best barbecue side dish in Texas’!!!!

Moroccan Glazed Carrots: These expertly prepared carrots are cooked low and slow in a spiced braising liquid that reduces to glaze perfection and coats each tender carrot with Moroccan flavor, making this the ultimate transcendent bite! Iraq War veteran Patrick Feges (pronounced “FEE-jis”) caught the BBQ bug while recovering from injuries sustained in combat, and he perfected his barbecue technique while cooking in some of Houston’s top restaurants. His wife, Erin Smith, is also a classically-trained chef and sommelier, and after she took home the win on Food Network’s “Chopped” in 2016, the duo decided to use the prize money to open their own Houston BBQ restaurant. Feges BBQ was born in 2018, and it was an immediate smash hit. A second location is now open, and Texas Monthly has named it one of the state’s 50 best BBQ joints.

Turkey arrives cooked and must be reheated prior to serving.

  • Items ship frozen with ice packs, may thaw during transit.
  • Sauces and rubs ship fresh.
  • Items may be stored in the refrigerator for up to 10 days or in the freezer for up to 3 months.
  • Sauces and rubs may be stored at room temperature.
  • Once opened, sauces may be stored in the refrigerator for up to 6 months.
  • Allow 3-4 days for turkey to thaw in the refrigerator.

To Serve

Turkey

  • Preheat oven to 325°F.
  • Allow turkey to come to room temp for 1 hour before reheating.
  • Open, collect any juices in a container and discard the vacuum sealed bag and place the turkey on a roasting pan with a rack.
  • Pour 1/2 inch of water or stock on the bottom of the pan, under the rack. Pour the collected juices from the bag over the skin of the turkey and cover the pan in foil.
  • Bake for 1.5-2.5 hours covered (depending on the size you may need more time).
  • Remove foil and continue baking for 20-30 minutes to re-crisp the skin.
  • Let the turkey rest for approx. 10 minutes before carving.
  • Serve and enjoy!

Sides

  • Open vacuum-sealed bag and empty contents (including liquids) into a 9" saute pan.
  • Cook over medium heat, stirring frequently, for 15-20 minutes (for loaded potato mash only, you may need to add 2-4 tablespoons of milk or butter to the pan while stirring to prevent the product from drying out (not included).
  • Serve and enjoy!

Cornbread

  • Preheat oven to 350°F.
  • Open the bag and pour batter in a greased 9×12 pan and cover with foil.
  • Bake for 25 minutes covered and 20-30 minutes uncovered (check for doneness in the center of the pan by using a toothpick or cake tester).
  • Serve with cinnamon-honey butter and enjoy!
