This package serves 8-10 people and includes
- Mt Tam (7 oz.) – An organic American original cheese recipe, our best-selling cheese has all the lusciousness you expect from a triple cream with a unique heart that upholds its texture. Named after the iconic landmark Mount Tamalpais that rises over the San Francisco Bay in Marin Country, Mt Tam cheese is produced with organic, locally sourced milk and rises above the standard for bloomy rind cheeses. Mt Tam takes you from fudgy firmness to buttery softness with flavors spanning from bright creme fraiche to complex and mushroomy, evoking the North Bay’s lush green and gold pastures.
- Wagon Wheel (6 oz.) – Born from the sunshine of California’s rolling golden hills, Wagon Wheel is our most versatile and snackable cheese. At room temperature, it’s approachable and delicious. When melted, we call it Liquid Gold. Designed by chefs for chefs (originally on Zuni Cafe’s pizza menu), Wagon Wheel is a washed rind cheese crafted from organic cow’s milk and aged for a minimum of 75 days.
- Ewenique (6 oz.) – Ewenique is made with 100% California sheep’s milk, an old favorite that has been re-vamped. It is a gouda-style cheese with notes of fresh cream and starches up front and a finish of warm vanilla and spiced tea. Pull nibbles from the wedge to expose the natural jagged curd structure, adding a unique aesthetic element to any grazing tray.

- Cheeses ship with gel packs, gel packs may thaw in transit.
- Expect cheese to arrive at room temperature.
- Upon arrival please refrigerate.
- Cheese is stable at room temperature, however, it is best stored in the refrigerator.
- For optimum enjoyment, please enjoy your cheese within 1-2 weeks. Soft cheeses should be enjoyed sooner.
To Serve
- Remove your cheese from the refrigerator at least an hour before serving, unwrap it, and place it on a cheese board or butcher paper.
- Cover with an inverted bowl. This allows the cheese to breathe and protect it while it comes to room temperature.
There is Mold on My Cheese!
- Traditional cheeses are often made with natural rinds that display a variety of colorful molds and bumpy textures. These rinds protect the cheese as it ages while contributing to its unique flavor profile.
- Bacteria and mold are essential components of cheese. When cut and wrapped, molds and surface oils can develop on the face of the cheese. Simply scrape the surface with a knife to remove before serving.
