This package serves 4-6 people and includes
- 2 racks Iberico Pork Ribs (approx. 3.5 lbs. total)
- Callos a la Madrileña Sauce (1 Pt.)
- Ribs ship fresh with ice packs, may thaw during transit.
- Upon arrival, store ribs in the refrigerator or in the freezer.
- Upon arrival, store sauce in the refrigerator.
- Ribs may be stored for up to 5 days in the refrigerator or up to 1 month in the freezer.
To Serve
Ribs – Oven
- Remove the ribs from the fridge 2 hours before grilling (the ribs have already been cooked for 12 hours, so you just need to give it a fast caramelization).
- Preheat oven to 450°F.
- Season the ribs with salt, place ribs in oven, and decrease temperature to 400°F.
- Allow to cook until golden brown, approx. 10-15 minutes.
Ribs – Grill
- Remove the ribs from the fridge 2 hours before grilling (the ribs have already been cooked for 12 hours, so you just need to give it a fast caramelization).
- Season ribs with salt and olive oil, and place ribs on the grill meat side down.
- Grill until golden brown.
Sauce
- Place the sauce in a saucepan and melt slowly over medium/low temperature, stirring every 30 seconds so it doesn’t burn at the bottom of the pan.
Assembly
- Pour hot sauce over ribs.
- Serve and enjoy!
