Most modern takes on biryani have eliminated the dish’s most important element: “dum-cooking,” or slow-cooking in a clay pot over an open fire. This is just the last step in crafting Biryani Bol’s traditional biryani, however: marinated meats, basmati rice, fresh seasonal vegetables, and classic seasonings like saffron are all sealed into the pot with bread dough before cooking, and once you reheat the clay pot at home and take that first bite you’ll understand the difference.

  • Biryani Bols ship frozen with ice packs, may thaw in transit.
  • Biryani Bols may be stored in the freezer for up to 1 week or in the refrigerator for up to 2 days.
  • Store raita in an airtight container in the refrigerator for up to 5 days.

To Serve

  • Preheat the oven to 350º F. If the biryani is refrigerated, keep it at room temperature for 20 mins.
  • Bake chicken and/or vegetables for 40 mins. Bake goat for 45 mins. Alternatively, heat biryani in the microwave for 3 mins.
  • Cut the dough around the lid and slowly lift open. Note: The bread layer is not edible.
  • Mix layers carefully.
  • Before serving, reach all the way to the bottom of the pot and pick up each serving.
  • Enjoy your Biryani Bol with a side of raita!
