Afuri, which opened its first location outside of Japan in Portland in 2016, isn’t your run-of-the-mill ramen shop. They specialize in yuzu-style ramen, made with a small Asian citrus fruit called yuzu, and a clear chicken-based broth that’s lighter than the more common pork-based tonkotsu. The addition of yuzu balances out the ramen’s richness, and it lightens and brightens the broth.

This package serves 3 people and includes everything you need to make 3 bowls of Yuzu Shio Ramen:
- 3 portions Thin Noodles
- 3 portions Shio Chicken Broth with Chi-yu (each 10 oz.)
- 3 portions Yuzu Extract (1 bottle)
- 3 Grilled Aburi Chashu
- 3 portions of Seasoned Bamboo Shoots
- 3 pieces of Nori Seaweed
- 3 Branded Ramen Cups
- 3 sets of Chopsticks
Recommended Garnishes Not Included
- Soft-boiled egg
- Spring onions
- Bok Choy
- Ramen Kits ship frozen with ice packs
- Ice Packs may thaw in transit
- Upon arrival, place immediately in the freezer, fridge, or prepare
- DO NOT Allow kits to come to room temperature
- Maybe kept refrigerated for up to 2 days or frozen for up to 1 week
To Serve
Broth, Chashu, & Bamboo Shoots
- If frozen, defrost in the fridge overnight
- Fill a sauce pot with water and bring to a boil
- Add the bags of broth (still in the bags) to the boiling sauce pot of water
- Bring the water back to a full boil (approx. 5 minutes)
- When the water comes back to a full boil add the bags of chashu + bamboo shoots (still in the bags)
- Cook for 1 more minute
- Turn off the heat and allow bags to rest in the water until you are ready to serve
Noodles
- Bring a stock pot of water to a boil
- Remove the noodles from their bags
- Add to the boilding water
- Stir to separate the noodles
- Cook for 1 minute and 30 seconds (use a timer)
- Strain the noodles into a colander
- Rinse the noodles thoroughly in cold water to remove the starch
- Drain the rinse water
To Serve
- Divide the noodles into the ramen cups
- Pour one bag of stock into each cup
- Add 1 piece of chashu to each cup
- Add 1 portion (bag) of bamboo shoots to each cup
- Add 1 portion of yuzu to each cup
- Finish with 1 piece of Nori
- Enjoy!
