From their Los Angeles food truck, they’re putting creative twists on the beloved Canadian dish and earning heaps of praise (not to mention plenty of diehard fans) in the process.
Their poutine starts with double-fried French fries, which are topped with cheese curds sourced from Wisconsin and decadent homemade brown gravy. From there, you can opt to add on five-hour braised beef short ribs or tender pork shoulder, or you can go completely vegetarian or vegan. This poutine is dangerously delicious, and seriously indulgent.

To Serve
Cheese Curds
- Remove curds from the refrigerator for at least 1 hour so they’re room temperature when serving.
Gravy
- Heat gravy in a saucepan on medium to low (you may need to add a little water to thin it out to the desired thickness). Use a whisk or wooden spoon to stir.
Protein (if applicable)
- Heat protein in a saucepan on medium to low for about 8-10 minutes. Stir occasionally (a very light simmer is okay).
Making the Perfect French Fry- Frying in Oil
- Fill 1/3 of pot with canola oil, heat to 350 degrees
- Fry for 3-5 minutes (if your oil smokes, it’s too hot and remove from heat)
- Move fries around in oil using tongs or fork to prevent fries from sticking together in early stages
- Strain the fries from oil and salt immediately.
French Fries: Frying Method
- Fill 1/3 of pot with canola oil, heat to 350° F.
- Fry for 3-5 minutes (if your oil smokes, it’s too hot and remove from heat).
- Move fries around in oil using tongs or fork to prevent fries from sticking together in early stages.
- Strain the fries from oil and salt immediately.
French Fries: Oven Method
- Heat oven to 425° F.
- Bake for 6-8 minutes, then turn up heat to 475 for final minute or to desired crispiness.
- Salt Immediately.
Dish Assembly
- The base will be the French fries.
- Add cheese curds (don’t be shy).
- Ladle gravy over the dish (again, don’t be shy!)
