Piece Pizzeria was founded in 2001 by Bill Jacobs, who had already achieved acclaim in the Windy City for bringing East Coast-style bagels to Chicago with the Jacobs Bros. Bagels chain. A New Haven native, he was disappointed to find no Chicago pizza that resembled the thin, "hold it and fold it," crunchy-chewy pizza of his youth. Piece Pizza brings New Haven's Wooster Street to Chicago.
