Addolorata Marzovilla, also known as “Nonna Dora,” has been making pasta by hand for more than 70 years. She emigrated to the United States from the Italian region of Puglia in the 1970s when she was 34, and her son Nicola opened an Italian restaurant in New York City, called I Trulli, in 1994. Nonna Dora offered up her pasta-making skills and “left the needlework for noodles,” as she put it, and could always be found at the restaurant making Puglia-style pasta the old-fashioned way, earning herself the nickname “The Pasta Machine.” Dora now has her own restaurant in New York City, Nonna Dora’s Pasta Bar. These iconic pasta dishes taste just like they were made by an Italian nonna – because they were!
This package serves 6 people and includes your choice of 6 Pastas and Dishes
- Pastas and Sauces arrive packaged separately
- Each serving of pasta is 5 oz.
- Each serving of sauce is 7 oz.
- Each serving of Lasagna and Melanaza is approx. 17 oz.

- Malloreddus – Saffron-seasoned gnocchi sardi in a sauce of sausage, tomato & saffron
- Orecchiette – Iconic orecchiette with rabbit ragu
- Cavatelli – Cavatelli in broccoli rabe sauce
- Melanzana – Baked eggplant with tomato & mozzarella
- Lasagna – Traditional meat sauce lasagna
- Gnocchi with Pesto – Pillowy potato-based gnocchi, served with an aromatic basil and pine nut pesto Genovese.
- Ricotta Cappelletti – Tender pasta stuffed with Ricotta di Bufala, in our tomato sauce with basil.
- Garganelli Bolognese – Garganelli in a classic bolognese meat sauce.
- Kit ships frozen with ice packs, may thaw in transit
- Upon arrival, place in the fridge or freezer
- May be kept in the refrigerator for up to 1 week and frozen for 1 month
To Serve
Mallaoeddus, Orecchiette, & Gnocchi
- Defrost the sauce, but not the pasta.
- Bring two quarts of salted water to a boil.
- Warm up the sauce in sautée pan on high heat.
- Cook pasta in water until it floats, about three minutes.
- Add 1 oz. of pasta water to your sauce & stir.
- Drain the pasta, toss with sauce, adding grated cheese to your liking
to your liking, then plate &…MANGIA! buon appetito!
Cavatelli & Garganelli
- Defrost the sauce, but not the pasta.
- Bring two quarts of salted water to a boil.
- Warm up the sauce in sautée pan on high heat.
- Cook pasta in water until it floats, about three minutes.
- Add 1 oz. of pasta water to your sauce & stir.
- Drain the pasta, toss with sauce, seasoning to your liking, then plate &…MANGIA! buon appetito!
Lasagna & Melanzana
- Defrost overnight
- Remove from bag & bake at 375° for 45 minutes
OR - Remove from bag & microwave for five minutes then plate &…MANGIA! buon appetito!
Cappelletti
- Boil 2 quarts of water in a large pot with a teaspoon of salt.
- Heat up the sauce of your choice in a saucepan large enough for the sauce and cappelletti.
- Once water is boiling, take the cappelletti pack out of the freezer, take them out of the plastic wrap carefully and boil them ( the pasta is cooked about 60 seconds after it rises to the top of the boiling water, should be a total of 5 minutes).
- Toss in saucepan with the sauce until cappelletti are coated.
