The original Commissary, in Germantown, Tennessee, was a small country store for over 90 years, selling everything from blue jeans to bologna, until Walker Taylor bought it in 1981 and transformed the historic building (located about a 20 minute drive from downtown Memphis) into one of the best barbecue joints in America. It’s become a cornerstone of the Germantown neighborhood, serving slow-smoked Memphis-style barbecue to locals, tourists, and celebrities alike.
Germantown Commissary’s unique brand of Memphis-style ‘cue is all about the pork (spare ribs and shoulder, specifically), which gets rubbed down with a sweet, salty, and slightly spicy seasoning blend before being slow-smoked over local hickory wood, which imparts a sweet & smoky flavor to the pork, until Taylor’s team of expert pitmasters deem it perfect.
